It's not even 9 a.m. and I am already thinking about dinner. Do you ever do that? I do it more often than I'd like to admit. Before I've finished one meal I am already thinking about the next.
Over the weekend I stumbled upon the blog Val So Cal and her recipe for California Roll In A Bowl. We had it for dinner last night and it was so delicious and light--perfect for this hot weather. I had it for breakfast this morning. And, I will be having it for lunch too. I know, I know but it's that delicious! I have been on an avocado kick lately. I had avocado tacos for lunch almost every day last week, and I am thinking I might have them for dinner tonight. What's your favorite way to eat avocados?

ReplyDeletei love avocados any way. avocado sandwiches with a little mayo and salt or tossed with grape tomatoes and feta or fresh mozzerella, or on a blt.

ReplyDeleteO.M.G we are obsessed with avocados. we buy the $5 bags on the side of the road in fallbrook. My husband make a pretty mean guacamole but I will eat them on anything. seriously.

ReplyDeleteBianca, I can't tell you how happy I am to hear I'm not the only person that wakes up and starts thinking about dinner. I'm often excited when I get to go to bed at night because it means I'll get to wake up and eat breakfast. Sigh, I just really like food. And this gorgeous dish you made I'm going to have to try as well. Anything with avocado is a weakness.

On the weekends, my sweet husband will say before we are abut to eat lunch...Do you have any ideas for dinner? He knows once I'm full I will never be very fun about talking about our weekend dinner menu.
