Cake coma


Hey all.  Sorry I am just now giving you an update to my birthday celebration, but I had to take Wednesday off to recoup from my cake coma.  Big boo surprised me with a lemon cake from Elizabethan Desserts.  Lemon anything is my favorite, but I must admit that we were both a little disappointed in their lemon cake (however their strawberry cake is d'lish!), but that didn't stop me from enjoying 2 pieces (not back to back).

What a wonderful day my birthday was!  The family went for a brisk walk and coffee in the morning.  I had to take Bronson to his tumbling class, but after that we were off to do a little birthday shopping with big boo!  Of course no birthday afternoon would be complete without a cocktail, and I have discovered a new favorite - The Ritz Martini.  Oh my is it d'lish!  Cognac, cointreau, champagne, and pomegranate juice.  I am not a fan of cognac, but I could sip it all day long when it's swimming in conjunction with cointreau, champagne and POM.

I figured a cocktail was a good way to loosen up big boo and his wallet for some shopping.  I was right.  I had no plans of really buying anything, it's just fun to see what's out there, and drag big boo around with me.  But it was my birthday...and I scored!
 
I have admired this bag for a while now, and big boo took notice.  We saw it at Co-Op and next thing I knew it was mine.  I still can't believe it.  I must admit that I do feel a bit guilty, not sure why.  Ok, I know why, it was a good little investment...and NOT the kind we need to be making right now.  Oh well, I guess I will be the best dressed in the welfare line. I joke, I  joke.

The day came to an end with a good friend and her adorable little pooch coming over to join us for cake.  I wish everyday could be my birthday.   Thanks to all of you for your warm birthday wishes.  I felt the love.

Naked Pomegranate Ritz – created by The Intoxicologist
1 ounce Hennessy
3/4 ounce Cointreau
1/2 ounce Fresh Squeezed Lemon Juice
1-1/2 ounce Brut Champagne

Combine Hennessy, Cointreau, lemon juice and Naked Pomegranate Acai juice in a mixing glass with ice.  Shake or stir for 15 to 20 seconds.  Strain into a large chilled cocktail glass.  Top off with champagne.  Garnish with lemon peel and enjoy!
